Easy Ranch Chicken; Excuse me, your life is waiting; a peer review, and some entertainment...

We got up at about 9:30, and I made a breakfast of eggs and toast. We read "the morning paper," while enjoying breakfast.

The morning paper is in quotation marks, because what it really means is that we sat across from each other at the kitchen table, with back-to-back laptops reading wral.com, and the N&O obits. :-)

I worked on, and completed, my student and program administrator surveys for my ENG 675 project, while Robert read, and later ran to the store, primarily for an ingredient I needed for lunch, but also picking up 6 or so other items for me while he was there. Thanks, my sweet.

I made my second recipe from the Dozens of Dishes: Replacements, Ltd. Employees Share Their Favorite Recipes cookbook:

Easy Ranch Chicken

4 chicken breast halves
1/4 cup melted butter
3 tablespoons vinegar
1 package dry Ranch salad dressing mix

Preheat oven to 350°. Arrange chicken in a 9" x 9" baking dish. Combine melted butter and vinegar and pour over chicken. Sprinkle dry salad dressing mix over chicken. Bake, uncovered, for 1 hour.

I made a half-recipe, and this dish was very, very good. I used boneless, skinless chicken breast halves, and to me, this recipe made it taste like the skin was still on. Definitely a keeper.

Book club met out at the B&N at Southpoint at 7:00. It's been a long time since everyone has been present, so that made it nice, and in the two hours we were there, we pretty much got caught up with each other's lives. We are the Mostly Social Book Club after all.

However, we are currently reading a book, Excuse Me, Your Life is Waiting, about which I'm very ambivalent. At times this book reminds me of a frenzied Amway meeting; at other times it reminds me of Nova's highly scientific String Theory series.

On the way back to Raleigh, I stopped by work, where I did my peer review of Paula's ENG 675 project.

I met Joe at Flex, and we played three or four games of free pool.

Matthew told us that Winniebago had been "reprimanded" for "berating" the audience about not clapping, and sure enough she was not doing it tonight.

At one point she said, "I've been told I've been a bitch about asking people to clap, so I'm just going to say it nicely, 'Please clap for people when they come up and sing. It makes for a much better evening, and it's just nice.'" Something to that effect.

At a little after midnight, we went over to Legends to meet up with Kevin (av8rdude) and Kurt, and to see the show, which turned out to be fairly decent.
